Herbed Turkey Burgers with Creamy Kale Salad
This quick weeknight meal is from my 5-Day Clean Eats Reset. It's dairy, gluten, sugar free and loaded with protein and fibre. Especially great for those summer nights spent around a grill.
Herbed Turkey Burgers
INGREDIENTS
1 lb Extra Lean Ground Turkey
1/4 cup red onion, chopped
1 Garlic (clove, minced)
1 tbsp dijon mustard
1 tbsp Italian seasoning or fresh parsley
Sea Salt & Black Pepper (to taste)
1 egg
DIRECTIONS
In a large bowl, combine the turkey onion, garlic, egg, seasoning + mustard. Season with salt and pepper, and mix until well combined. Form the meat mixture into equal-sized patties and set aside.
Heat a grill or pan to medium heat and cook the patties for 10-15 minutes per side, or until cooked through. Serve on top of Kale Salad (see below).
Kale Salad with Creamy Garlic Dressing
This delicious dairy-free creamy dressing is amazing as a dip for veggies, topping for burgers or as a dressing for salads
INGREDIENTS
4 tbsp almond butter or tahini
Juice from 1/2 a lemon
1-2 cloves garlic, minced
1 tbsp olive oil
1/2 tsp each salt + pepper
1-4 tbsp warm water, as needed
Optional: cayenne to taste
6-8 cups of kale (or 1 large bunch)
DIRECTIONS
Combine all the ingredients in a processor or blender. Add 1 tbsp water at a time to thin out - as needed. Optional: add cayenne pepper for a spicy kick!
Clean and chop kale into thin pieces. Transfer kale to large bowl and add 1tbsp of olive oil. Massage Kale with oil for 2-3 minutes (to soften kale and improve taste). Top kale with desired amount of dressing and mix well.
Store extra dressing in fridge for up to 1 week.
Tip: this kale salad tastes evenbetter if prepped the day ahead.
