Paleo Banana Bread

Everyone needs a go-to banana bread recipe. Here's a Paleo version thats insanely delicious with no grains, gluten, dairy or sugar needed!

Note: Coconut flour is readily available at most grocery stores and health food stores. It is extremely high in fibre and low in sugar and carbohydrates, making it a great alternative to refined flours. You cannot substitute the coconut flour for any other flour.

Tip: I like to pre-slice and freeze individual slices to have on hand for a healthy snack when the craving strikes. It tastes great topped with almond butter.

Paleo Banana Bread

Paleo, Low Sugar + Grain/Gluten/Dairy-Free


Ingredients

Adapted from Ambitious Kitchen

  • 3 large (or 4 small) ripe bananas, mashed

  • 1 tsp vanilla extract

  • 1/4 cup nut butter (I used almond butter - but you could use sunflower for nut-free)

  • 2 large eggs or 3 medium eggs

  • 1/2 cup coconut flour

  • 2 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 teaspoon cinnamon

  • 1/2 cup toppings - dairy-free chocolate chips, flaked coconut, chopped walnuts

How-To

  1. Preheat oven to 350 degrees F.

  2. Coat a 9x5-inch loaf pan with coconut-oil spray OR parchment paper

  3. Mash the bananas in a bowl.

  4. Whisk eggs into bananas and add the nut butter and vanilla.

  5. Add in the coconut flour, cinnamon, baking soda and powder.

  6. Stir until evenly combined. The batter will be thick.

  7. Pour the batter into the pan and add toppings.

  8. Bake for 50-60 minutes until a knife inserted in the centre comes out clean.

  9. Let loaf cool completely (30 minutes minimum) before cutting into slices..

  10. Will keep in fridge for 5 days or freeze to stay fresher longer (pre-cut the slices before freezing).
